Scrimping on Ingredients to Fatten Profits


You knew it would come to this.  If you haven’t seen it already, then you will.  Take notice!


Not only are many major food makers, “repackaging” their products, but some have been quietly changing their recipes to include more fillers and cheaper ingredients to help cut costs.  You may have heard in very recent times that some companies were asking the FDA to allow a higher percentage of artificial fats instead of cacao fat and still call the product chocolate.  This would increase the company’s profits and lower the quality of your product.  What a bonus for the consumer!  Luckily, in June of 2007 the FDA said, “Cacao fat, as one of the signature characteristics of the product, will remain a principal component of standardized chocolate.”


But, you have to watch out…still.  Vegetable oil is being substituted for a portion of the cocoa butter in some chocolate.  A well-known spice maker is supplying food companies with cheaper spices, such as Mexican oregano instead of pricier Mediterranean oregano, and new flavor blends, like garlic concentrate instead of heavier (and costlier to ship) garlic cloves.


By reducing the more costly ingredients to more inexpensive options, they can make their product cheaper to produce.  But does this also create a lesser quality product?  And the consumer doesn’t know about the change most of the time since it is hidden in the lengthy ingredient list.  Remember to look for changes in your favorite foods and let the company know if you don’t like the change.


Luckily, when I shop for chocolate the ingredient list is small so I can usually tell when they are hiding or changing things.  But what about spices or tea or nuts?  The products carried by Drexelius Chocolates are premium chocolate bars and the manufacturers are small and dedicated to creating a top quality product.  They are already investing time, effort, energy and passion.  Why scrimp on an ingredient?  It won’t make the product as incredible as it could be and then all that time, effort, energy and passion is wasted.  So they don’t do it.  They keep using the best available products, which in turn give them the best results.
