The incredible chocolate of Claudio Corallo will soon be available right here and not a moment too soon!
I remember hearing about and trying Corallo chocolate for the first time. His approach is simple. He lives at, works on and oversees his cacao plantations on Sao Tome & Principe, which is off the west coast of Africa. He has learned through hard work and dedication how to bring out the best of the cacao bean. This year’s chocolate batch is truly inspiring.
At the Fancy Food Show in San Francisco in January of this year I did a lot of tasting of Claudio’s chocolate. It really blew me away how much he has improved his processes, which is revealed in the chocolate.
