A few weeks ago I mentioned my neices and I were going to make a version of the Girl Scout Cookies called Tagalongs, but it got delayed due to illness. Well, we finally got the chance to make these delicious and simple cookies! These are incredibly easy, fun and yummy to make:
What you need:
- Crackers — I use Ritz, but any cracker you like will do
- peanut butter — creamy or crunchy, but I used creamy
- melted dark chocolate – we used Nirvana Dark
- wax or parchment paper
Melt your chocolate in a double boiler over low heat. This keeps the chocolate from breaking down under direct heat, prevents burning and allows it to heat evenly. You don’t need any fancy equipment, just two sauce pans that fit inside each other. Make sure you don’t have too much water in the lower pan because you don’t want the steam to condense on the melting chocolate.
While the chocolate is melting, lay out a few pieces of wax paper. Give yourself enough room to work. Take a cracker and spread a decent amount of peanut butter on one cracker and close up the sandwich with another cracker. You decide how much or little peanut butter you like. Lay out the cookie sandwiches as you go so they are ready to be dipped in the melted chocolate.
When the chocolate has melted, bring it off the double boiler. Be careful because the pot will be hot! I like to use a spatula and a fork to help with the dipping process. Put a finished cookie into the melted chocolate and turn to coat. Use the fork to lift it out. Place it on the wax paper. Continue with the other cookies. If the chocolate begins to harden, return the pan to the double boiler to remelt.
That’s all there is to it! They are absolutely delicious 🙂 It will take a few hours for the chocolate to harden.
