Amano Chocolate had a contest a few months back to guess the origin of their newest chocolate bar. I didn’t win the contest, but was ecstatic when I heard that Amano had gained the rights to the Chuao cacao beans. If anyone could do right by these beans, it would be award-winning Amano Chocolate.
I have had the privilege of working with Amano Chocolate for many years. They started offering chocolate to the public the same year I began Drexelius Chocolates as a business. Their chocolate was among one of my first offerings and has always remained a favorite.
The Chuao bar is not glossy, but a flat deep brown color like worn leather. It has a delicate fruit aroma with a hint of smoke. The chocolate has a soft snap and a nice smooth, creamy melt on the tongue. I tasted no bitterness and the flavors are not overpowering. There are notes of brown sugar and I taste sweet plum, which lends a bit of dryness at the finish.
