Langues de chat are delectable buttery cookies known for their long, flat shape. When I saw this recipe it was perfect, except I had to add chocolate 🙂
These are excellent cookies to take to a party or give a dozen as a gift. They are elegant on their own or enjoy them with your morning coffee. Add a cookie or two to ice cream. So many ways to enjoy these yummy beauties. The tender cookie with a nutty goodness and a hint of lime…and chocolate! Make sure to get yours because these cookies will be gone lickity split.
Pistachio-Lime Langues de Chat…with chocolate!
Makes about 30 2-inch cookies
- 2/3 cup unsalted butter
2/3 cup granulated sugar
1/2 teaspoon lime zest
1 teaspoon vanilla extract
2 egg whites
1 cup all-purpose flour
1 teaspoon kosher salt
2/3 cup ground, roasted pistachios – I just minced mine
1 cup chopped chocolate – melted in a double-boiler ready for dipping or drizzling
1) Whisk together flour, salt and ground pistachios. Set aside.
2) Cream butter and sugar together until light and fluffy. Add in lime zest and vanilla. Process for another minute. Add egg whites one at a time and mix to combine. Add flour mixture until smooth.
3) Fill a piping bag (or plastic bag) with dough. Chill 30 minutes.
4) Using a #3 tip, pipe into 2-inch long strips and bake 7-10 minutes at 350 F, until the edges begin to brown. Cool completely on rack before adding chocolate.
