Raise a Glass – It’s Drink Wine Day

Break out the bottles and glasses, February 18th is Drink Wine Day.  It doesn’t matter what color you like, just pop the cork and enjoy.  Some people like to have chocolate with their wine.  Never tried it?  Here’s how you do it:

Generally, dark chocolate goes best with stronger red wines, while milk and white chocolates pair better with lighter reds and sweeter white wines, respectively.  The perfect pairing balances sweetness, fruitiness, and acidity — and your own flavor preferences, of course!

A great pairing with both dark and milk chocolate is a fortified wine such as Port.  Save the complex vintage Port to savor with the cheese course and bring out the Ruby Port and Tawny Port to enjoy with chocolate.

Some readers may not believe in drinking dry red wines with chocolate.  I disagree, as long as it is a wine with straightforward, strong notes.  If your wine is tannic (causes dryness or puckering in the mouth), pair it with a creamier dark chocolate because the cocoa butter in the chocolate will mellow out the tannins.  Try it and see what you think!

Most of the time, Champagne and chocolate don’t pair well.  Against the sweetness of the chocolate, Champagne appears tart.  It is too delicate to stand up to the cocoa butter mouthfeel of chocolate.  Save the Champagne for fresh strawberries.

Testing, tasting and trial-and-error is the best way to find out what works for you.  What might be good for some doesn’t work for others.  So drink up and enjoy some wine and chocolate today!
