Although this is one of the hardest pairings because of the complexity of both products, it is loads of fun to find your favorite! Let taste (and this short primer) be your guide. Most of all, pour and have fun!

Taste Basics
Generally, dark chocolate goes best with stronger, bold red wines. Milk and white chocolates pair better with lighter reds and sweeter white wines. The perfect pairing balances sweetness, fruitiness, and acidity — and your own flavor preferences, of course!  Some people may love a pairing while others may not.  Tasting and testing is par for the course.

Pairing with Port
A great pairing with both dark and milk chocolate is a fortified wine such as Port, which is a sweet red wine often served at dessert.  Ruby Port and Tawny Port are excellent styles to enjoy with chocolate.

Pairing with Red Wine

Pairing with Champagne
I am not a big fan of Champagne and chocolate together.  I don’t think they pair well.   Champagne can come off as tart against the sweetness of the chocolate.  Champagne can also be too delicate to stand up to the cocoa butter mouthfeel of chocolate.  I prefer to enjoy each on its own.
